Nutrient Dense Chocolate Mousse

Indulgence meets nutrition in this sumptuous Organic Chocolate Mousse recipe. What makes it even better is the use of organic, farm-fresh ingredients like pastured eggs and raw dairy. As a recent staple in our home, especially in the days following our monthly raw milk collection, this recipe is a celebration of sustainable, local agriculture and the incredible benefits it brings to our table.

The eggs used in this recipe come from our own backyard chickens. These happy hens roam freely, enjoying a natural diet rich in insects and plants. The benefits of these pastured eggs are numerous:

  • Nutrient Density: Pastured eggs are packed with essential nutrients, including vitamins A, D, E, and B12, along with omega-3 fatty acids and high-quality protein.

  • Flavor: The yolks of pastured eggs are vibrant and rich, lending an incomparable flavor and depth to the mousse.

  • Sustainability: Raising your own chickens or supporting local, ethical farms promotes sustainability and reduces the carbon footprint associated with large-scale egg production.

The raw milk we collect is a treasure trove of nourishment. We scoop the cream which settles at the top of the bottle to use in this recipe. Using raw dairy in our chocolate mousse elevates it to a whole new level. Here's why raw dairy is so special:

  • Probiotics: Raw dairy contains beneficial probiotics that support gut health and enhance nutrient absorption.

  • Enzymes: The enzymes present in raw dairy can aid in digestion, making it easier for us to tolerate dairy.

  • Full Nutrient Spectrum: Unlike pasteurized milk, raw milk retains its full nutrient spectrum, including vitamins, minerals, and heat-sensitive enzymes.
