Chocolate Raspberry Chia Pudding
This Chocolate Raspberry Chia Pudding recipe is a great breakfast or snack idea and will keep you full for a long time. Chia seeds are a great plant based protein which pack a big nutrient punch and are high in antioxidants. As well as protein, chia seeds are a great source of dietary fibre, omega-3 and 6 fatty acids, calcium, phosphorus and zinc. The best part about this recipe is that you can make it the night before and place in the fridge overnight to set. This way, if you’re short on time, you can take it with you in the morning and eat on the go.

INGREDIENTS
400 ml coconut cream
1 cup frozen raspberries
2 tablespoons maple syrup or pure honey
2 tablespoons cacao powder
1 teaspoon vanilla extract
4 tablespoons chia seeds
INSTRUCTIONS
Place the coconut cream, raspberries, maple syrup/honey and vanilla extract in a blender or food processor and blitz on high until the mixture is smooth.
Add the chia seeds and stir through to combine.
Pour the mixture into four serving cups or jars and pop in the fridge to set overnight.
