When friends give you fresh homegrown lemons, you make lemon ice cream!

This recipe makes the most delicious and fresh ice cream. I first made it in the middle of winter, but it transported me straight to a tropical island under the hot summer sun. I can’t wait to make this again in summer!

That said—I’ll be making it through winter too, because it’s just that good.

Ingredients

  • 5 egg yolks, from pasture raised chooks

  • 1/3 cup raw sugar, maple syrup or raw honey

  • 2 cups raw cream

  • 1 cup raw milk

  • Juice of 6-8 lemons

  • 2 tbsp lemon rind

Instructions

1. In a large bowl, combine egg yolks and sweetener of choice until well mixed. 

2. Stir in lemon juice, rind, raw milk and raw heavy cream.

3. Transfer the mixture to an ice cream maker and follow the manufacturer’s instructions.
