Peanut Butter Chocolate Chip Cookies

INGREDIENTS

1 cup peanut butter
2/3 cup maple syrup
1 tsp vanilla extract
1/4 tsp sea salt
1 tsp baking soda
1.5 cups rolled oats 
1 cup oat flour (just blend 1 cup oats) or spelt flour
1/4 cup chocolate chips

INSTRUCTIONS

1. Preheat the oven to 180C.
2. In a bowl, combine peanut butter, maple syrup, vanilla and salt. Stir to combine.
3. Add the oat (or spelt) flour, rolled oats and baking soda. 
4. Mix until it forms a thick dough.
5. Fold in the chocolate chips.
6. Using a tablespoon, roll balls of batter onto a pan lined with parchment paper and press lightly to flatten.
7. Bake for 15 minutes at 180C.
8. Remove from the oven and cool for 10 minutes before eating. 

Note: These divine cookies will happily reside in an airtight container in your fridge for up to a week. Perfect for those moments when you need a mindful bite of sweetness.
